A live station and an Indian buffet are not simply two display styles. They change how food is produced, how guests move, what the venue must approve, and where the budget goes. Live service puts interaction and freshly finished food in front of guests. A buffet puts more of the menu on one visible, replenished service line.
Neither is universally better. The right format is the one that can serve the expected guests within the available time and room while supporting the occasion.

Guest experience: participation versus overview
At a live station, guests can see part of the preparation and make a focused choice. That can create conversation and a memorable arrival or meal feature. It can also create a natural pause while the food is assembled or finished.
At a buffet, guests can usually see several dishes at once and build a plate in sequence. A well-positioned line makes the full menu legible, but the experience is less centred on the chef or preparation moment. The line can still slow when labels, plate pickup, popular dishes, or two-way traffic are poorly arranged.
Cost: compare the complete service
The live per-person price is only one part of a live event. Add the C$100 total transportation, setup, teardown, and equipment fee, separately billed staffing, applicable add-ons, event-specific equipment, and HST. Staffing is C$18 per person per hour with a three-hour minimum; travel time is not billed.

Space: production and queues both count
A live station has a working footprint, a guest-facing side, and a production or replenishment path. Mehfill uses approximately 40 square feet per station as an early planning estimate. The final allowance must also account for queues, fire separation where applicable, equipment, accessibility, and safe circulation.
A buffet may remove guest-facing cooking, but it still needs space for the line, plate pickup, labels, replenishment, service staff, and guests moving away with food. A double-sided or duplicated buffet is not automatically appropriate; the room and service plan determine whether it helps.
Staffing: live service has a defined baseline
Every Mehfill live or BBQ event uses five service staff and two cooks. Two additional service staff are added above 100 guests. This predictable baseline helps define the service, but the actual billed hours remain quote-specific.
Buffet staffing depends on whether the order is delivered and set up, actively replenished, served by staff, or part of a larger hosted event. State the expected level of service rather than asking only for “a buffet price.”
Capacity: the serving window matters
Mehfill’s early estimate for a live station is 60–70 guests per hour. It is not a guarantee. Divide the number of guests expected to use the station by the hours available, then compare that demand with the estimate. Peak arrivals and menu complexity can still require another plan even when the average looks comfortable.

Venue and weather risk
Live Chaat and Live Tandoor do not have identical site needs. Tandoor and BBQ directions require explicit review of cooking and fire approval. Chaat still requires a workable food-service, equipment, and guest-flow setup. Electrical, fuel, ventilation, and access requirements are confirmed for the selected venue.
For an outdoor live or BBQ plan, heavy rain or a thunderstorm activates the contingency. The resulting service change or cancellation decision is event-specific and should be recorded in writing. A buffet can reduce some live-production exposure, but an outdoor buffet still needs weather and food-safety protection.
When a hybrid is better
A hybrid can let the buffet carry the full meal while one live station creates a focal point. It can be a strong answer when guests need dependable access to food but the host still wants interaction. It can also cost more and consume more space because both systems must be staffed, staged, and replenished.
Before choosing a hybrid, decide which guests and which part of the meal depend on the station. If the station is optional, a queue may be acceptable. If every guest must use it, capacity becomes central.
A simple decision rule
- Prioritize live service when the food interaction is a core event feature and the venue, schedule, and budget can support it.
- Prioritize a buffet when a broad meal, predictable access, and simpler production are more important.
- Consider a hybrid when one focused live moment adds value but should not carry the entire guest count.
